Unique to the JANUS collection is the high-end DLC (diamond-like carbon)-coating. This coating method was invented for the highest demands. The amorphous carbon layer is only micrometers thin, but is impervious to acids, bases, and extreme temperatures. It also has low friction and enormous scratch resistance, optimizing the functional properties of the blade for extreme sharpness and blade durability.
The short blade on this Paring Knife is perfect for preparation and cleaning. The paring knife can also be used for peeling fruits and vegetables. The uncoated and polished edge guarantees the finest possible cut. Nesmuk's unique steel contains the element niobium, which makes it possible to have an extremely fine steel mix and high rust resistance at the same time. It also increases the mechanical density, making the blade tougher and stronger. The result is an extreme sharpness as well as better blade lifetime and edge holding ability.
