Heavensake is a composition by acclaimed French cellar master, Regis Camus, in collaboration with Japan’s most respected sake breweries. Admired for his virtuosity in blending, Regis defined the soul of Heavensake, immersing himself in the spirit and tradition of Japan. Regis and the respective toji (sake brewmaster) worked in tandem to create the unique Heavensake blends. Their common dedication to excellence set the grounds for the creation of the first Franco-Japanese sake meeting the highest standards of balance, purity, and refinement.

Junmai Daiginjo
The Junmai Daiginjo offers a floral nose with hints of grape, apple, and tropical fruit. Flavors are reminiscent of early summer pears, wild red berries, and muscat grapes. It pairs well with uni, lobster, pata negra Ibérico ham, Parmigiano Reggiano, and any ingredients with strong umami. Recommended dessert pairings include tiramisu, chocolate fondant, and crème brûlée.

Junmai Ginjo
The Junmai Ginjo is a Franco-Japanese composition by Regis Camus in collaboration with Urakasumi. The nose features lemon peel, cocoa, and crème brûlée, with flavors of honeycomb, nougat, and white raisin coming through. Recommended pairings include ceviche, raw oysters, tuna tartare, arctic char, sashimi, sushi, green salads, tempura vegetables, lightly spicy food, and chicken.

Junmai
Junmai means pure, with no distilled alcohol added like in standard grade sakes. This one features a nose of salted caramel, cacao, kumquat, and almond. The taste is savory and mineral, round on the palate, and with a bright, fresh finish. It pairs well with ceviche, raw oysters, tuna tartare, poached fish, shrimp cocktails, sashimi, Margherita pizza, burgers, and New York strip steaks.
